We got back from our cruise earlier this week. It was so fun. Every place we visited was beautiful. The most beautiful was Belize. The water was turqoise in color and you could see to the bottom of the ocean it was so clear. We snorkled and you could seriously see 20 plus feet below you to the ocean floor.
It was so hard to come home. The weather was in the 80s, the ocean water was warm, and I didn't cook one time - yah!

The room steward made towel animals while we were at dinner every night. The kids always got so excited to get to our room and see what we had (a monkey, a dog, a dinosaur, an elephant, etc.).

Belize, Caye Caulker, also known as paradise. Pictures don't even give it justice. Seriously, it is the most beautiful place we've ever seen. We are on our way to snorkle on the Barrier Reef.

Chef Kelsey
Let me start by saying, our family loves the Food Network. We watch it quite often and Kelsey will often wake up before the rest of us on Saturday or Sunday mornings and turn it on to watch by herself. Now, I have gotten lots of good tips and a few new recipes that our family now likes. But, I was surprised one Sunday when Kelsey started writing a "recipe" she made up herself. We were sitting in Sacrament Meeting and she started writing down a cheesecake recipe she wanted to try. It was a little odd, I have to admit. Katie and I weren't sure about some of the unusual ingredients, but I told her we could try it out if she wanted. So, I bought her ingredients and she made it....

As you can see by the picture above, it looks pretty good. And, if you havent' guessed by now, it tasted pretty good too. We were all pleasantly surprised and she, of course, was very proud!
Here Kelsey is drooling over her wonderful creation. Oh, and I also better not forget to mention that we video taped the entire process of making the cheesecake.
